What You Need:
1 garlic clove, minced
1 T Dijon style mustard
1/4 t dried rosemary
1/8 t dried thyme
1/4 t salt
1/4 t pepper
2 T red wine vinegar
1/8 C olive oil
1 bunch Arugula, rinsed and pat dry
1 C Romaine lettuce rinsed and pat dry
3 T sundried tomatoes, packed in oil, drained and chop fine
1/4 C Parmesan cheese, grated
How to Make It:
Place the garlic in a jar that has a tight fitting lid.
Add the mustard and vinegar to the jar.
Tighten the lid onto the jar and shake until the ingredients are combined.
Add in the rosemary, thyme, salt and pepper and shake again.
Pour the wine and olive oil into the jar, tighten the lid, and shake briskly until all the ingredients are incorporated together.
Combine the Arugula, Romaine lettuce and tomatoes together in a salad bowl.
Pour the dressing over the salad mixture and toss to coat well.
Divide between 2 salad plates and sprinkle with the Parmesan cheese.
Serves: 2
Cut red peppers into heart shaped pieces and garnish the top of your salads. Onion, green peppers and croutons can also be added to make this salad the tops.
